Wine-making

The Franciacorta Brut D.O.C.G. borns from Chardonnay grapes clones selections. Gathered by hand in little chests, tender pressing of entire grapes. Controlled fermentation at temperature from 17 and 18 Celsius degrees inside stell tanks with controlled temperature

Ripening

Six months in steel from the end of the alcool fermentation

Prise de mousse

From March to April wine is moved in bottles where in addition with sugar and selected yeast, the fermentation takes place. Then the bottles are stacked in appropriate rooms with controlled temperature (12, 14 Celsius degrees, average)

Sharpening

The sharpeing minimum period of time is 18 months before starting up the remouage and degorgement phases

Tasting notes

Straw colored with green reflexes, persistent and fine perlage, typical bouquet from in-bottle fermentation characteristics, bread-crust and yeast scent enriched with citrus and dried fruit flavour (almond, hazelnut, dried fig). Keen, fresh, harmonic
